Honey crystallises when glucose – one of the two main sugars – falls out of solution and forms small crystals. This is completely natural, does not affect taste or quality, and is often a sign that the honey is raw and unprocessed.
What happens when honey crystallises?
Honey is a supersaturated sugar solution: it contains more sugar than the liquid can actually hold in solution. The two dominant sugars are glucose and fructose, and they behave quite differently. Glucose has relatively low solubility in water and tends to fall out of solution over time. When this happens, small crystals form, gradually growing and giving the honey a firmer, sometimes grainy, consistency.
Fructose, on the other hand, is much more soluble – about four times more than glucose – and remains in the liquid. This is why crystallised honey sometimes has two visible layers: a firmer crystalline layer and a softer, more syrup-like layer on top.
Why do some varieties crystallise faster than others?
How quickly honey solidifies depends primarily on two factors: the ratio of glucose to fructose, and the ratio of glucose to water. The higher the glucose content in relation to fructose, the faster the crystallisation. The flowers from which the bees collect nectar determine this balance, which means that different honey varieties behave very differently on the shelf.
- Rapeseed honey has one of the highest glucose contents and can crystallise within a few days of harvesting.
- Heather honey and forest honey crystallise more slowly and often develop a coarser, grainier texture.
- Acacia honey is rich in fructose and can remain liquid for over a year.

Is crystallised honey bad?
No. Crystallisation affects neither taste, quality, nor shelf life. Honey is one of the few food ingredients that practically never spoils when stored correctly. Many actually prefer the firm, creamy consistency – it’s easier to spread on bread and doesn't run off the spoon.
A common question we get from customers is whether crystallisation means the honey is authentic. The short answer: it's a good sign, but not an absolute guarantee. Raw, untreated honey almost always crystallises, partly because it contains natural microparticles of pollen and beeswax that act as nuclei for crystal formation. Industrially pasteurised honey is filtered and heat-treated to remain artificially liquid longer.
However, there are genuine honey varieties – like acacia honey – that remain liquid for months due to their high fructose content. And in theory, even fake products can crystallise depending on what they contain. So, crystallisation tells a lot about the honey's composition, but not the whole story.
How to liquefy crystallised honey again
If you want your honey runny, you need heat – but gently. High temperatures break down the enzymes and aromatic compounds that give raw honey its character and flavour depth.
- Place the jar in a water bath at about 40 °C – lukewarm, not hot. If you have a kitchen thermometer, that's perfect, but the rule of thumb is that the water should feel pleasantly warm against the inside of your wrist.
- Stir gently at regular intervals. This helps the crystals dissolve faster.
- Change the water when it cools and continue the process. Depending on how much honey there is and how solid it has become, it can take 30–60 minutes.
Avoid the microwave. It heats unevenly and can quickly take parts of the honey above 40 °C, which destroys flavour and aroma. For the same reason, never put honey directly into boiling water.
How to store honey to slow down crystallisation?
Storage makes a big difference. The temperature that most accelerates crystallisation is around 10–15 °C – just like in a cool pantry or refrigerator. Temperatures in this range make it easiest for glucose to form crystals.
- Store honey at room temperature, preferably in the dark and with the lid tightly closed.
- Avoid the refrigerator – it is in precisely the temperature range that drives crystallisation fastest.
- Use a clean spoon. Crumbs and moisture in the jar can act as crystallisation nuclei and accelerate the process.
The simplest way to avoid crystallisation? Eat the honey. A jar that is used regularly rarely has time to crystallise.

Absolutely. It's the same product in a different form. Try it on porridge, in tea, on toast, or directly from the spoon. Please note that honey should never be given to children under 1 year of age, regardless of consistency.
Does all honey eventually crystallise?
Most varieties do, but the pace varies enormously. Rapeseed honey can solidify within days, while acacia honey can remain liquid for over a year. Varieties with high fructose content crystallise slowest.
Does honey lose flavour when it crystallises?
No. The flavour profile remains. However, crystallised honey can be perceived as milder on the tongue because the sugar crystals dissolve more slowly. If you warm it gently in a water bath, the original aroma dynamics will return.
Why is store-bought honey sometimes always liquid?
Industrially produced honey is pasteurised – it is heated to high temperatures and finely filtered. This significantly delays crystallisation, but it also removes pollen and affects taste and aroma. Raw honey, like the kind we sell at Honeyprince, has not undergone that process.
Can crystallised honey go bad?
Not from the crystallisation itself. Honey has naturally low water activity and a low pH, making it extremely durable. Problems only arise if moisture gets into the jar – then yeast can start fermenting the sugar. Keep the lid closed and use a clean spoon.
